Three Summer Dinner Recipes On Repeat In My Kitchen

I’m always on the lookout for new recipes. My three requirement are that a recipe is easy, healthy, and fast. Below are three recipes I’ve been whipping up the last two months. They’ve been on rotation in the kitchen and everyone in this house likes them.

Roasted Sweet Potato & Black Bean Rice Bowls

This recipe is by SkinnyTaste (I sort of loathe the name of that website) and it’s SO GOOD. It tastes like something you get at a restaurant. My parents were here last week and I made it for them and they were also just as impressed as I am about this bowl. It’s so filling, healthy, easy, fast, etc. Just go click on the link and make this dinner this week. You won’t regret it.

Pasta Primavera

This recipe is chalked full of veggies. I have a slight disclaimer here that there is a lot of chopping when making this pasta dish. But it’s worth it and bonus points that this dish will keep really well for left overs. I will make a massive bowl of it and we’ll enjoy it for dinner two nights in a row.

Avocado Chicken Salad

This is the third or forth summer in a row that we’ve been making this dish. You can eat it as a salad, put it on toast, or enjoy with tortilla chips – almost like an avocado salsa. I love grilling the chicken and be sure to get the fire roasted corn from Trader Joe’s!
